I was wondering how I create stats for my horses. I am not sure how to do this or what it means. Thanks.

You already have! =)
"Stats" are simply the horses' basic statistics.. name, age, breed, gender, sire/dam, etc... On the Playing Guide page, there's a list of everything you need to have created for each horse. =)
