I'm just wondering how breeding happens. (and I don't mean the birds and the bees lol). Is there a certain form you have to fill out, or someone that has to be informed?

At this point, there's no particular form for you to fill out (except the form on the MHR page to register a bred horse, which you do once the foal is born). You can just say that you've bred Stallion X to Mare Z and their foal is due on such-and-such date. The breeding season is February through August; a mare's gestation period is approximately 11 months. =)

You might also want to check with the registry that you horse is in. Mine, the stock breed registry, requires breeding reports on all its horses before foals can be registered.
